- left over steak
- onions, diced
- jalapenos. diced
- vinegar based bbq sauce
- cheese - whatever is on hand
- chips
The first thing you need to do is cut up the steak to small bite size pieces. Next put it in a skillet with the onion and the bbq sauce. Saute it on medium heat just until the steak is warm. Remove from heat and add jalapenos.
On a cookie sheet, lay out tortilla chips. Next put the steak mixture on top. Cover with cheese. Broil till melted. Serve with sour cream, lettuce, tomatoes and salsa.
This turned out to be an excellent lunch for my husband and I. The bbq sauce added an excellent tang to the nachos. The key to this meal was that everything I used to create it was on hand. I did not run to the store for any part. You want to make the meal to fit what you have and like. We like things spicy so that is why we had the jalapenos on the nachos.
